1 res onion, chopped
1 tomato, sliced
1 red chilli, sliced
2 spring onions, chopped
200ml Olive oil
Juice (60ml) of two limes
24 prawns, cleaned and peeled
Salt and pepper to taste
1. Place onion, tomato, chilli and spring onion in a bowl.
2. Add olive oil and lime juice, mix well and place in the fridge until serving.
3. Season prawns with salt and pepper and grill in the pan for 1-2 minutes per side until cooked through.
4. Toss the greens together, top with prawns and drizzle with salsa.
